Full written recipe for pasta 3 ways
For boiling pasta
Ingredients:
• Penne Pasta 200 gm
• Water for boiling
• Salt to taste
• Black pepper powder a pinch
• Oil 1 tbsp + 1 tsp
Methods:
• Set water for boiling, add salt to taste and 1 tsp oil, when the water comes to roaring boil, add the penne pasta and cook for 7-8 minutes or until al dente.
• Strain the pasta and immediately, add 1 tbsp oil, salt and pepper powder to taste, toss well to coat the salt and pepper, keep aside until used for pasta.
For white sauce
Ingredients:
• Butter 30 gm
• Refined flour 30 gm
• Milk 400 ml
• Salt to taste
• A pinch of black pepper powder
• Oregano ½ tsp
• Nutmeg powder a pinch
• Processed Cheese 50 gm
• Boiled/cooked pasta as required
Methods:
• Set a pan on medium low heat, add butter and let it melt, add the flour and cook the flour for 2-3 minutes, remember not to burn the flour or changing the colour to brown, keep it light brown.
• Further add, milk in 3 batches and make sure to whisk well while adding milk to make a lump free sauce.
• Further add salt to taste, a pinch of black pepper powder, oregano and nutmeg powder, stir well.
• Now add processed cheese and stir well until the cheese melts.
• The white sauce is ready, you can make it and keep it at this stage and later heat it again by adding some milk, when your about to serve.
• When your serving, add the boiled pasta and lightly stir and cook for 2 minutes on medium flame. your creamy cheesy white sauce pasta is ready, serve immediately along with some dried herbs on side.
For red sauce pasta
Ingredients:
• Tomatoes 6-7 medium size
• Oil 2 tbsp
• Garlic 5-6 cloves (sliced)
• Onions 1 medium size (chopped)
• Kashmiri red chilli powder 1 tbsp
• Salt to taste
• Tomato ketchup 2 tbsp
• Oregano 1 tsp
• Red chilli flakes ½ tsp
• A pinch of black pepper
• Boiled/cooked pasta as required
• Pasta water as required to adjust the consistency
• Processed cheese 50 gm
Methods:
• Wash the tomatoes well and cut them in quarters, further transfer them in a grinding jar and blend the tomatoes into a purée. I've kept it little coarse, if you wish you can blend into a fine purée.
• Set a sauce pan on low heat, add oil and sliced garlic, cook until the garlic starts to get some colour.
• Add chopped onions and cook on medium flame until its translucent.
• Now lower the flame and add, Kashmiri red chilli powder and cook on low flame for a short 10-15 seconds.
• Now, add the tomato purée, salt to taste and tomato ketchup, stir and cook on medium high flame, for 1-2 minutes, further cover and cook for 10 minutes on medium flame.
• Now, add oregano, red chilli flakes and pinch of black pepper powder, stir and cook for a minute, homemade red sauce is ready, keep it aside and use it later when making pasta live for your family.
• For making pasta, simply just add the cooked pasta and stir gently, add some pasta water to adjust the consistency of the sauce and cook for 2-3 minutes on medium heat, your red sauce pasta is ready, you can add some processed cheese if you wish to.
For pink sauce
Ingredients:
• Red sauce
• White sauce
• Cooked/boiled pasta
• Fresh cream 100 ml
Methods:
• For pink sauce pasta simply add fresh cream into the red sauce pasta, lightly stir well and cook for 2 minutes on low flame.
• You can adjust the quantity of crem to adjust the colour of the sauce until its pinkish in colour, your pink sauce pasta is ready, serve hot with some grated processed cheese on it.
Note: you can add your favourite veggies, grilled chicken or paneer in your favourite pasta or you can just enjoy simple sauce pasta just the way I do.

WHITE SAUCE PASTA
Preparation time 10 minutes
Cooking time 10-15 minutes
Serve 2-4
Ingredients
For White Sauce
100 gm Butter, cut into cubed, मक्खन
100 gm Refined flour, मैदा
1 ltr Milk, दूध
1 tbsp Butter, cubed, मक्खन
For Boiling Pasta
Water as required, पानी
1 tsp Oil, तेल
Salt to taste, नमक स्वाद अनुसार
2 cups Penne Pasta, पेने पास्ता
1 large Carrot, cut into dice, गाजर
12-15 no. Button Mushrooms, cut into half, मशरूम
2 tsp Oil (for coating), तेल
For White Sauce Paste
½ tbsp Oil, तेल
2-3 Garlic cloves, chopped, लहसुन
¼ cup Sweet corn kernels, blanched, भुट्टे के दाने
Boiled Pasta & Vegetables, उबले हुए पास्ता और सब्जियां
⅓ cup Remaining Pasta Water, पास्ता का पानी
1 cup Prepared White Sauce, वाइट सॉस
¼ cup Processed cheese, grated, चीज
2 Green chillies (less spicy & chopped) हरी मिर्च
1 tsp Coriander leaves, chopped, धनिया पत्ती
1 ½ tsp Extra virgin olive oil, जैतून का तेल
For Garlic Bread
1 ½ tsp Oil, तेल
2-3 Garlic cloves, crushed, लहसुन
Baguette, Slices, बगेत ब्रेड
For Garnish
Basil leaves, बसिल की पत्तियां
Process
For White Sauce
In a sauce pot, add butter, once it melts, add refined flour, stir until creamy/ lump free and cook it for a minute.
Slowly & gradually add milk, whisk continuously until it's smooth & creamy. Cook it for 2-3 minutes or until slightly thicken.
Transfer it to a bowl, add butter for coating to avoid layering.
Keep it aside for further use.
For Boiling Pasta
In a pot, add water, once it’s boiling, add oil, salt to taste, penne pasta, carrots, mushroom and cook it for 8-10 minutes or until at al dante stage. or until al dente
Strain the excess water and coat the pasta with oil to avoid sticking to each other.
Keep it aside for further use.
For White Sauce Paste
In a pan, add oil, once it's hot, add garlic, salt to taste, corn kernels and toss it for a minute.
Add boiled pasta & vegetables, remaining pasta water and saute.
Add white sauce, processed cheese and cook until the cheese melts.
Add green chilies, coriander leaves, olive oil and mix it well.
Transfer it to a serving dish, garnish it with basil leaves.
Serve with garlic bread.
For Garlic Bread
In a pan, add oil, once it's hot, add garlic and cook it until golden brown in color.
Add bread slices and toast it until golden in color.
Keep it aside for further use.

PINK SAUCE PASTA
Preparation time: 10 minutes + boiling time
Cooking time: 15 minutes
Serves: 4
Ingredients:
For Boiling Pasta
2 cup Penne Pasta
Salt to taste
2 tbsp Oil
For Pink Sauce
2 tbsp Oil
3-4 Garlic cloves, coarsely grounded
2 large Onions, finely chopped
1 tbsp Red Chilli powder
6 large fresh tomatoes, pureed
Salt to taste
Penne Pasta, boiled
2-3 tbsp Ketchup
½ cup Sweet Corn, boiled
1 big bell pepper, diced
2 tsp dried Oregano
1.5 tsp Chilli Flakes
2 tbsp Butter
¼ cup Fresh Cream
Few Coriander Leaves, finely chopped
¼ cup Processed Cheese, grated
Process
• In a heavy bottom pan, heat water, add salt and oil, bring to a boil, add pasta and cook for about 90%.
• Strain the pasta in a bowl, add some more oil to avoid from sticking. Reserve pasta water. Keep aside for further use.
• Heat oil in another pan, add garlic and cook till fragrant.
• Add onions and cook till translucent. Add red chilli powder and mix well.
• Add tomato puree and salt, mix well and cook for 5-7 minutes.
• Add pasta and mix well. Add ketchup, sweet corn, bell peppers, oregano and chilli flakes, mix well.
• Add butter and fresh cream, mix well and cook for a minute.
• Garnish with coriander leaves and processed cheese.
Note
• Boil the paste 90%; rest will cook in a sauce
• Don’t overcook the pasta
• After adding cream, immediately remove from the flame, as it will start curdling

Ingredients
For Cooker Wala Pasta
2 tbsp Oil, तेल
1 inch Ginger (peeled & finely chopped) अदरक
2-3 no. Garlic cloves, sliced, लहसुन
1 medium Onion, chopped, प्याज
1 tbsp Butter, cubed, मक्खन
Salt to taste, नमक स्वादअनुसार
1 ½ cups fresh Tomato puree, ताज़े टमाटर की प्यूरी
1 tbsp Degi red chili powder, देगी लाल मिर्च पाउडर
2 tsp Coriander powder, धनिया पाउडर
½ tsp Sugar, चीनी
½ cup Sweet corn kernels, भुट्टे के दाने
1 medium Tomato, chopped, टमाटर
Salt to taste, नमक स्वादअनुसार
1 ½ tbsp Butter, cubed, मक्खन
2 cups Water, पानी
1 tbsp Tender Coriander stem, finely chopped, धनिये के डंठल
1 tsp dry Oregano, ओरिगैनो
½ tsp Chilli flakes, चिली फ्लेक्स
2 cups Penne pasta, पेने पास्ता
For Garlic Butter
2-3 no. Garlic cloves, crushed, लहसुन
2-3 tbsp Butter, cubed, मक्खन
For Garlic Bread
6 no. Bread slice, ब्रेड स्लाइस
1 tbsp Garlic Butter, गार्लिक बटर
A pinch of dry oregano, ओरिगैनो
A pinch of chili flakes, चिली फ्लेक्स
3 no. Cheese slice, चीज़
For Toasting Bread
1 tsp Garlic butter, गार्लिक बटर
½ tsp Olive oil, ऑलिव ऑयल
For Finishing Pasta
¼ cup Tomato ketchup, टोमॅटो केचप
2-4 tbsp Olive oil, ऑलिव ऑयल
2-3 no. Basil leaves, roughly torn, बेसिल की पत्तियां
For Garnish
Cheese, grated, चीज़
dry Oregano, ओरिगैनो
Basil leaf, बेसिल की पत्तियां
Process
For Cooker Wala Pasta
● In a pressure cooker, add oil, once it's hot, add ginger, garlic and saute it for a minute.
● Add onion, butter, salt to taste and saute it until translucent.
● Add fresh tomato puree and cook for 5-6 minutes on medium flames.
● Add degi red chili powder, coriander powder and saute it for a minute.
● Add sugar, sweet corn kernels, tomato, salt to taste, butter, water, tender coriander stems, oregano, chili flakes, penne pasta and mix it well.
● Cover it with a lid, cook it for a whistle and leave it aside to depressurize the cooker.
● Finish it with prepared tomato ketchup mixture and give it a good mix.
● Transfer it to a serving dish, garnish it with grated cheese, dry oregano and basil leaf.
● Serve hot with prepared garlic bread.
For Garlic Butter
● In a mortar pestle, add garlic and crush it coarsely.
● Add butter and mix it well.
● Transfer it into a bowl and keep it aside for further use.
For Garlic Bread
● Take bread slices, apply prepared garlic butter on each side, sprinkle some dry oregano, chili flakes, place cheese slices and cover it with another bread slice.
● Keep it aside for further use.
For Toasting Bread
● In a non-stick pan, add garlic butter, olive oil, once it's hot, place prepared garlic breads and toast them for 2-3 minutes on each side until golden brown.
● Transfer it to a serving dish and serve hot with prepared pasta.
For Finishing Pasta
● In a bowl, add tomato ketchup, olive oil, basil leaves and give it a good mix.
● Keep it aside for further use.

2 packs Noodles (नूडल्स)
2 ltr Water (पानी)
2 tbsp Salt (नमक)
2 tbsp Oil (तेल)
For Chow Mein
2 tbsp Oil (तेल)
2 medium Onions - sliced (प्याज़)
5-6 cloves Garlic - chopped (लहसुन)
3 fresh Green Chillies - chopped (हरी मिर्च)
1 inch Ginger - chopped (अदरक)
1 medium Red Bell Pepper - julienned (रेड बैल पेपर)
1 medium Capsicum - julienned (शिमला मिर्च)
½ medium Cabbage - shredded (पत्ता गोभी)
Boiled Noodles (उबले हुए नूडल्स)
½ tsp Red Chilli Sauce (रेड चिली सॉस)
¼ tsp Soya Sauce (सोया सॉस)
Spring Onions (प्याज़ पत्ता)
For Sauces Mixture
1 tbsp Vinegar (सिरका)
1 tsp Red Chilli Sauce (रेड चिली सॉस)
1 tsp Green Chilli Sauce (ग्रीन चिली सॉस)
1 tsp Soya Sauce (सोया सॉस)
½ tsp Powdered Sugar (पिसी हुई चीनी)
For Powdered Spices
½ tsp Garam Masala (गरम मसाला)
¼ tsp Degi Red Chilli Powder (देगी लाल मिर्च पाउडर)
Salt to taste (नमक स्वादानुसार)
For Egg Mixture
1 Egg (अंडा)
½ tsp Red Chilli Sauce (रेड चिली सॉस)
¼ tsp Vinegar (सिरका)
¼ tsp Soya Sauce (सोया सॉस)
For Garnish
Spring Onions (प्याज़ पत्ता)
Process
For Boiling Noodles
In a large pot heat water, salt and bring it to a rolling boil then add the raw noodles and let them cook.
Once cooked remove in a strainer and apply oil and keep aside for further use.
For Sauces Mixture
In a bowl add vinegar, red chilli sauce, green chilli sauce, soya sauce, powdered sugar and mix everything properly and keep aside for further use.
For Powdered Spices
In a bowl add garam masala, degi red chilli powder, salt and mix everything then keep aside for further use.
For Chow Mein
In a pan heat oil and add onion, ginger, garlic, green chillies and saute for a few seconds.
Now add red bell pepper, capsicum, cabbage and saute for a minute on high heat.
Then add boiled noodles, prepared sauces mixture, spices mixture, red chilli sauce, soya sauce and toss it properly until well mixed.
Continue cooking for a minute then switch off the flames and add spring onions.
Serving immediately and garnish it with spring onion.
For Egg Mixture
In a bowl add egg, red chilli sauce, vinegar, soya sauce and mix everything properly and make an omelet.
Then cut it into strips and serve along with Chow mein to make it an egg chow mein.

VEG SPRING ROLL WITH SHEETS RECIPE
Preparation time 10 minutes
Cooking time 20-25 minutes
Serve 2
Ingredients
For Filling
2 tbsp Oil, तेल
1 inch Ginger, chopped, अदरक
2-4 Green chilli, chopped, हरी मिर्च
½ medium size Cabbage, shredded, गोबी
2 medium size Carrot, peeled, julienne, गाजर
2 medium size Capsicum, julienne, शिमला मिर्च
Salt to taste, नमक स्वादअनुसार
½ tsp Sugar, चीनी
1 tsp Vinegar, सिरका
1 tsp Green chilli sauce, ग्रीन चिली सॉस
½ tsp Red chilli sauce, रेड चिली सॉस
1 tsp Dark soy sauce, डार्क सोया सॉस
¼ cup Spring onion, chopped (only white part) प्याज पत्ता
2 tbsp Coriander leaves, chopped, धनिया पत्ता
For Dip
Season sauce water, सॉस का पानी
2 tbsp Tomato ketchup, टॉमैटो केचप
For Egg Roll Sheet Batter
1 cup Refined flour, मैदा
Salt to taste, नमक स्वादअनुसार
¼ tsp Sugar, चीनी
1 ½ cups Water, पानी
1 Egg white, (optional) अंडा का सफेद हिस्सा
½ tsp Vinegar, सिरका
1 ½ tsp Oil, तेल
1 tsp Oil, तेल
For Spring Roll Sheet Batter
2 cups Refined flour, मैदा
Salt to taste, नमक स्वादअनुसार
1 tsp Vinegar, सिरका
¼ tsp Sugar, (optional) चीनी
1 cup Water, पानी
For Binding Flour & Water Slurry
2 tbsp Refined flour, मैदा
1 tbsp Water, पानी
Other Ingredients
Cornstarch for dusting, कॉर्न स्टार्च
Oil, तेल
Oil for deep frying, तलने के लिए तेल
For Garnish
Coriander sprig, धनिया पत्ता
Process
For Filling
Heat a wok on high flame, add oil once it's hot, add ginger, green chilli and saute well.
Add cabbage, carrot, capsicum, stir and cook for 2 minutes on high flame.
Add salt to taste, sugar, vinegar, green chilli sauce, red chilli sauce, dark soy sauce.
Stir well and cook for another 1-2 minutes.
Once the vegetables are cooked well. Finish with spring onion and coriander leaves.
Transfer it into a bowl and keep aside for further use. Let the vegetable leave its water.
Squeeze out the excess water from the vegetable and keep aside for further use.
For Dip
In a bowl, add the vegetable squeezed out water, add tomato ketchup and mix well.
Keep aside for further use.
For Egg Roll Sheet Batter
In a large bowl, add refined flour, salt to taste, sugar, water, egg white, vinegar, oil and mix well.
Add a little more oil and mix well. Make sure there's no lumps.
The batter should be pouring consistency. Keep aside for 10-12 minutes.
Now, heat a flat non-stick pan, pour a ladleful of batter, spread it evenly and cook on slow flame.
Cook until the top gets dry, turn and cook the other side.
Remove on a plate and keep aside for further use.
For Spring Roll Sheet Batter
In a large bowl, add refined flour, salt to taste, vinegar, sugar, water and knead a tight dough.
Cover it with a muslin cloth and rest it for 10 minutes.
Divide the dough into equal parts and roll it, roll as thin as possible after rolling it, apply oil and dust flour and keep the rolled sheet on one top of each other and roll it.
Heat a pan, cook half the string rolling sheet. Cook from both sides properly. And keep aside for future use.
Or you can even steam it in a steamer, place the rolled sheet and steam for a few seconds.
Keep aside for further use.
For Frying
Take a spring roll sheet and place a spoonful of prepared stuffing.
Pull and fold over the corner tightly till it reaches half the sheet.
Fold over sides like an envelope leaving no air pockets. Apply water slurry around the corners and seal the edges.
Heat oil in a kadai, deep fry the spring roll until they turn golden brown.
Once they turn golden brown, drain them over absorbent paper.
Serve hot with prepared dip.

CHINESE SAMOSA RECIPE
Preparation time 10 minutes
Cooking time 7-10 minutes

Ingredients
For filling
1-2 tbsp Oil तेल
2 Spring onion white part , sliced, प्याज पत्ता
2 Green chillies, sliced, हरी मिर्च
1 inch Ginger, sliced , अदरक
1 medium Carrot, Peeled, julienned , गाजर
½ medium Cabbage, batons , पत्ता गोभी
1½ tbsp Soya sauce , सोया सॉस
1 tbsp Vinegar , सिरका
1 tsp Sugar , चीनी
¼ cup Bread slice sides, chopped, ब्रेड
3 tbsp fresh Coriander leaves with tender stem, chopped धनिया पत्ता
1 tbsp Spring onion green part, chopped, प्याज पत्ता
For cover
6-8 Bread slices, sides cut, ब्रेड
Process
For filling
In a pan add oil, let it heat properly and then add spring onion white part, green chillies, ginger and saute for a minute.
Now add carrot, cabbage saute for 1-2 minutes then add soya sauce, vinegar, sugar and mix it will.
Once the veggies start sweating add the bread sides and saute for 2 minutes.
Remove from the flames and add coriander leaves, spring onion and mix everything properly and keep aside to cool down.
For cover and frying
Take a slice of bread and flatten it out with the rolling pin and then apply a very little amount of water on it.
Now keep the filling in the centre and fold it in a triangle, then seal the edges and trim the access.
Repeat and make rest of them. Add the prepaid samosas in medium hot oil and fry until golden brown from all sides.
Serving hot with chai and tomato ketchup.

PUNJABI STYLE SAMOSA
Preparation time 10 minutes
Cooking time 20-25 minutes
Serving 4
Ingredients
For Dough
1 cup Maida , मैदा
Salt to taste , नमक स्वादानुसार
½ tsp Carom seeds , अजवाइन
2 tbsp Ghee , घी
Cold water as required , ठंडा पानी
For Samosa Masala
1 tbsp Coriander seeds , धनिया के बीज
1 tbsp Fennel seeds , सौंफ़
½ tbsp Cumin seeds , जीरा
For Samosa Filling
1 tbsp Ghee , घी
1 inch Ginger, chopped , अदरक
2 fresh Green chillies, chopped , हरी मिर्च
10-12 Raisins , किशमिश
1 tsp Turmeric powder , हल्दी पाउडर
½ tsp Degi red chilli powder , देगी लाल मिर्च पाउडर
¼ tsp Asafoetida , हींग
4-5 Potatoes, boiled & slightly mashed , आलू
¼ cup Green peas , हरे मटर
1 ½ tbsp Prepared Masala , तैयार किया हुआ मसाला
½ tsp Black pepper powder , काली मिर्च पाउडर
1 tsp Dry Mango powder , आमचूर
Salt to taste , नमक स्वादानुसार
Process
For Dough
In a bowl add maida, salt, carom seeds, ghee and mix everything properly until it resembles bread crumb consistency.
Now add cold water and knead a hard dough. Cover and keep aside for resting at least for 15-20 minutes.
For Samosa Masala
In a pan add coriander seeds, cumin seeds, fennel seeds and roast them lightly.
Transfer them into a motor-pastel and crush them coarsely and keep aside for further use.
For Samosa Filling
In a pan add ghee, ginger, garlic, green chillies and saute for a minute.
Now add raisins, turmeric powder, degi red chilli powder, asafoetida, potatoes, green peas and mash it coarsely, mix everything properly and cover and cook for 4-5 minutes on medium heat.
Now remove the cover and cook on high flames for 3-4 minutes or until light charred.
Add the prepared masala, black pepper powder, dry Mango powder, salt and mix everything properly. And keep aside for further use.
For Assembling Samosa.
Take a medium portion of the dough, make a round peda and roll it thin in an oval shape.
Now cut in from the centre and take one half of it and make a cone shape of it and add the filling in it.
Now apply water on the open ends of the cone and fold it towards you, keep it down and give it a gentle press so that it can stand, make all others in the similar way.
Heat oil in a kadhai on medium heat and fry the samosas in it until golden brown from all sides, remove on an absorbent paper. Serve hot with tomato ketchup.

CHEESE BURST PIZZA RECIPE
Preparation time 15 minutes
Cooking time 30-35 minutes
Serves 4
Ingredients
For Pizza Dough
1 ½ cup Refined flour , मैदा
½ tsp Baking powder , बेकिंग पाउडर
½ tsp Baking soda , बेकिंग सोडा
1 tsp Sugar , चीनी
Salt to taste , नमक स्वाद अनुसार
Water , पानी
½ cup Curd , दही
1 tsp Oil , तेल
For Cheese Burst Sauce/Spread
¼ cup Milk , दूध
½ tbsp Corn-starch , कॉर्न स्टार्च
1 cup Processed cheese , प्रोसेस चीज
For Pizza Toppings
1 small Onion, diced , प्याज
½ small Red bell pepper, diced , रेड बेल पेपर
½ small Green bell pepper, diced , ग्रीन बेल पेपर
¼ cup Corn kernels , भुट्टे के दाने
Salt to taste , नमक स्वादानुसार
For Assembling Pizza
1 tsp Olive oil , जैतून का तेल
2 tbsp Pizza sauce , पिज़्ज़ा सॉस / tomato ketchup
¼ cup Pizza Cheese , चीज
Process
For Pizza Dough
In a bowl add refined flour baking powder, baking soda, sugar, salt and mix once.
Now add water, curd and knead a soft dough, then add oil and knead it properly, cover and keep aside for further use.
For Cheese Burst Sauce/Spread
In a pan add milk, corn-starch, ½ of the cheese and mix it properly.
Now keep on the heat and melt the cheese properly and let it get thick.
Then add the remaining cheese and mix it properly until it all together, remove in a bowl and keep in the fridge to cool down.
For Pizza Toppings
In a bowl add diced onion, red bell pepper, green bell pepper, corn kernels, salt and mix everything properly and keep aside for further use.
For Assembling Pizza
Firstly take 2 equal portions of the dough and roll it thin using a rolling pin.
Now cook it on a flat pan from both sides and keep aside for further use.
After this make two more equal portions of dough and roll it thin using a rolling pin but this should be 1-2 inches bigger then the first roti's.
Now apply olive oil on a tray or plate and place the uncooked rolled dough properly on it.
Then spread the prepared cheese sauce on it but not on the sides.(leave 1-2 inches of the sides)
Place the smaller cooked roti on patt we're the cheese sauce is being spread and then fold left 1-2 inches of uncooked rolled dough on the cooked roti.
Now spread the pizza sauce on the cooked roti, add the toppings and then grate the pizza cheese on it, apply some olive oil on the uncooked sides.
Now place it in a preheated kadai or in an oven and bake until the cheese is melted and becomes little golden brown in colour.
Serve it warm.
NOTE:::: If you are using oven, then cook in preheated oven at 200*C for appx 15 minutes.
For PIZZA SAUCE
Preparation time 10 minutes
Cooking time 15-20 minutes
Ingredients
1 tbsp Oil, तेल
2-3 Garlic, Chopped, लहसुन
1 medium Onion, Chopped, प्याज
½ cup fresh Tomato Puree, टमाटर प्यूरी
½ tsp Sugar, चीनी
½ tsp Vinegar, सिरका
Salt to taste, नमक स्वादअनुसार
½ tsp Oregano , ऑरेगैनो
½ tsp Chilli flakes , चिल्ली फ़्लेक्स
Process
In the same pan heat oil, add chopped garlic, onion saute until the onions are translucent.
Add fresh tomato puree, sugar, vinegar, salt to taste and mix well.
Add oregano, chilli flakes mix well and remove most of the water from it and keep it aside.

KURKURE MOMO
Preparation time 10 minutes

For Dough
1 cup Refined flour, मैदा
½ cup whole Wheat flour, आटा
Salt to taste, नमक स्वादअनुसार
1 tsp Vinegar, सिरका
Water as required, पानी
½ tsp Oil (after kneading) तेल
For Filling
½ cup Cabbage, chopped, पत्तागोभी
2-3 no. Green chillies, (less spicy & chopped) हरी मिर्च
1 inch Ginger, finely chopped, अदरक
6-7 French beans, chopped, फ्रेंच बींस
1 small Carrot, finely chopped, गाजर
1 tbsp fresh Coriander leaves, chopped, धनिया पत्ता
1 tsp Black peppercorns, crushed, काली मिर्च का पाउडर
Salt to taste, नमक स्वादअनुसार
2 tsp White pepper powder, सफेद कालीमिर्च का पाउडर
200 gms Paneer, पनीर
Salt to taste, नमक स्वादअनुसार

1 tbsp Schezwan chutney, शेज़वान चटनी
2 tbsp Mayonnaise, मायोनिज
1 tbsp Coriander leaves, chopped, धनिया पत्ता
For Slurry
½ cup Refined flour, मैदा
¼ cup Cornflour, कॉर्नफ्लोर
1 cup water, पानी
1 tsp Degi red chili powder, देगी लाल मिर्च पाउडर
¼ tsp Garam masala, गरम मसाला
Salt to taste, नमक स्वादअनुसार
½ tsp Vinegar, सिरका
Other Ingredient
Refined flour, for dusting, मैदा
1 cup Cornflakes (crushed, for coating) कॉर्नफ़्लेक्स
2-3 tbsp Poha, powder, पोहा का पाउडर
½ tsp Degi red chili powder, देगी लाल मिर्च पाउडर
Salt to taste, नमक स्वादअनुसार
For Dip
2 no. Green Chillies (less spicy & chopped) हरी मिर्च
1 tbsp fresh Coriander leaves, chopped, धनिया पत्ता
2-3 tbsp Onion, chopped, प्याज
½ cup Mayonnaise, मायोनिज
3 tbsp Processed Cheese, grated, प्रोसेस चीज
1 tsp Oil, तेल
Other Ingredients
Oil for frying, तेल तलने के लिए
For Garnish

Lemon wedges, नींबू की फांक
Process
For Momo Dough
In a parat or a bowl, add refined flour, wheat flour, salt to taste, vinegar, water as required and knead well.
Make a semi soft dough, apply some oil and knead it again.
Cover it with a muslin cloth, rest it for 10-15 minutes.
keep it aside for further use.
For Filling
In a bowl, add cabbage, green chillies, ginger, carrots, fresh coriander leaves, freshly grated black peppercorns, salt to taste, white pepper powder and mix everything well.
Squeeze out the water of the mixture and transfer it to another bowl.
Add paneer, salt to taste, black pepper powder, schezwan chutney, mayonnaise and mix well.
Add fresh coriander leaves and keep it aside for further use.
For Slurry
In a bowl, add cornflour, refined flour, degi red chili powder, garam masala, water, salt to taste, vinegar, mix it well and make a smooth batter.
Keep it aside for further use .
For Kurkure Momos
Take the dough and make small lemon size balls, roll it in a thin small round shape.
Stuff a small spoonful amount of filling and fold it in a desired shape.
In a bowl, add cornflakes, poha and make a coarse mixture. Add degi red chili powder, salt to taste and mix well.
Dip the momo balls in the cornflour slurry, then coat it in crushed cornflakes and poha mixture. Keep it aside to rest for 4-5 minutes on a plate.
For Frying
Heat oil in a kadai, once the oil is hot enough, add momos and fry until light golden color appears.
Transfer it on an absorbent paper and keep it aside for further use.
Transfer it on a serving dish, top it up with the dip, sprinkle some degi red chili powder, lemon wedges and serve hot with dip.
For Dip
In a bowl ,add green chilies, fresh coriander leaves, onion, mayonnaise, processed cheese, oil and mix well.
Keep it aside for further use.

ICE CUBE MOMOS
Preparation time 10 minutes
Cooking time 20-25 minutes
Serve 2-4
Ingredients
For Dough
1 cups Refined flour, मैदा
¼ cup whole Wheat flour, आटा
Salt to taste, नमक स्वादअनुसार
Water for kneading, पानी
¼ tsp Vinegar, सिरका
½ tsp Oil, तेल
For Filling
2 cups Cabbage, finely chopped, पत्तागोभी
1 cups Carrot, chopped, गाजर
¼ cup French beans, chopped, फ्रेंच बींस
Salt to taste, नमक स्वादअनुसार
200 gms Paneer, crumble, पनीर
2-3 tbsp Coriander leaves, chopped, धनिया के पत्ते
4 Green chillies, chopped, हरी मिर्च
¼ inch Ginger, grated, अदरक
½ tbsp Butter, cubed, मक्खन
For Chutney
2 large Tomato, cut into half, टमाटर
2 fresh Red chillies, लाल मिर्च
1 medium size Onion, cut into half, प्याज
1 Green chilli, less spicy हरी मिर्च
1 ½ tsp Oil Sesame oil (optional) तेल
¼ cup Peanut, मूंगफली
2-4 Garlic cloves, लहसुन
2-3 tbsp white Sesame seeds (optional) सफेद तिल
Salt to taste, नमक स्वादअनुसार
1 tsp Black pepper powder, काली मिर्च का पाउडर
Other Ingredients
Oil for greasing, तेल
Water, पानी
Schezwan chutney, शेज़वान चटनी
Cheese blend, चीज
Prepared Filling, तैयार की हुई फीलिंग
For Garnish
Mayonnaise, मायोनिज
Schezwan chutney, शेज़वान चटनी
Spring onion, chopped, प्याज पत्ता
Coriander sprig, धनिया पत्ता
fresh Red chilli, लाल मिर्च
Process
For Dough
In a parat or bowl,add refined flour, whole wheat flour, salt to taste and water, mix well.
Add vinegar and mix everything well, add little by little water and make a soft dough.
Apply some oil over the dough, cover it with muslin cloth and rest it for 10 to 15 minutes.
For Filling
In a bowl, add cabbage, carrot, french beans, salt to taste and mix well. Leave it for a few minutes.
Squeeze the vegetables and remove the excess water.
In another bowl, add paneer, coriander leaves, and green chilies mix well.
Add ginger, squeezed vegetables and mix well, add softened butter and mix everything well.
For Momos Chutney
Place the cooking net on the flame, put tomatoes, fresh red chili, green chili, onions, once all the vegetables are roasted well, remove into a bowl.
In a pan, add oil, once the oil gets hot, add peanuts, garlic, white sesame seeds and saute till peanuts and sesame seeds turn fragrant, remove into the same bowl, add salt to taste, Black pepper powder.
Transfer the mixture into the grinder and grind into a smooth paste.
Remove into the bowl and keep it aside for further use.
For Schezwan Cheese Momos
Sprinkle some flour over the dough and roll out a thin sheet, cut the sheet from top and bottom.
Apply oil on the ice tray and put the prepared sheet on it and cut it from the side.
Make the holes using a toothpick, place the prepared mixture into a tray and cover it with another sheet.
In an ice tray, place the rolled sheet and cut the edges. Add Schezwan chutney, cheese, prepared mixture, schezwan chutney and cheese.
Cover it with another sheet and keep it aside for further use.
For Steaming
In a shallow pan, add water and place the momos tray, cover it with the lid and let it cook for 7 to 8 minutes on moderate heat.
For Garnish
In a slate, apply prepared chutney and mayonnaise, place the prepared momos and sprinkle some spring onion, schezwan chutney.
Garnish it with coriander sprig and serve hot.

CHICKEN MOMOS
Preparation time: 15 minutes + resting time
Cooking time: 15 minutes
Serves: 4
Course: Snack
Cuisine: Indian/ International
Ingredients:-
Momos Dough
1 cup whole wheat flour
1 ½ cup refined flour
Salt to taste
1 tsp sugar
1 tsp white vinegar
Water as required
Chicken Filling
½ cup green onion, chopped
1 tbsp tender coriander stems
salt to taste
1 tbsp green chili
1 tsp white pepper
1 tsp soy sauce
1 tbsp garlic paste
1 tbsp ginger, chopped
300 gms chicken minced
Momos Chutney
4-5 tomatoes, cut into half
2 dried kashmiri red chillies
Salt to taste
1 cup water
1 cup peanuts
3-4 garlic cloves
1 tsp coriander seeds
Process:-
● Knead the dough using whole wheat flour, refined flour, sugar, vinegar and salt. Dough has to be semi soft. Keep aside to rest for 30 minutes.
● Meanwhile to make fillings in a mixing bowl add all the ingredients and mix well.
● Once the dough has finished resting, lightly flour a work surface, and roll out the dough into medium size thin disk. Stuff the filling into it, give the desired shape to momo and keep aside.
● Steam the momos for 15 minutes in the steamer.
● Remove and serve immediately with momo chutney.
● For momos chutney heat oil in pan add tomatoes, Kashmiri red chillies, salt and water. Allow it to cook for 5-6 minutes.
● Meanwhile in another pan dry roast peanuts, coriander seeds for 2-3 minutes.
● Into a blender add tomatoes along with its remaining water, peanuts mixture, garlic cloves and blend it into a smooth paste.
● Serve this chutney with momos.

Butter – 1tbsp
~FOR SPICY CHUTNEY~
Tomato Ketchup – 1cup
Chilli Sauce – 2-3tbsp
Ginger chopped – 1tsp
Onion chopped – 2tbsp
Coriander chopped – 2tbsp
Soya sauce – 1½ tbsp
Spring onion chopped – 2tbsp
Green chilli chopped – 1tsp

VEG MANCHOW SOUP
Oil – 2 tbsp
Leftover veggies – ½ cup
Soya sauce – 1 tbsp
Vinegar – ½ tbsp
Chilli sauce – 2 tsp
Tomato ketchup – 3 tbsp
Salt – to taste
Pepper – ½ tsp
Water – 2 cups
Corn starch – 1 tbsp
Water – a dash
Fresh Coriander – 1tbsp
Spring onions – 2tbsp

TAWA PIZZA RECIPE
Preparation time: 15 minutes
Cooking time: 15 minutes
Serves: 4
Ingredients:
For Tawa Pizza dough:
1 cup All purpose flour , मैदा
¼ cup Wheat flour , गेहूं का आटा
1/2 tsp Baking powder, बेकिंग पाउडर
1/2 tsp Baking soda , बेकिंग सोडा
1 tbsp Oil , तेल
Salt to taste , नमक स्वादअनुसार
3 tbsp Curd , दही
For Topping
2 tbsp Olive oil , तेल
2 Capcium Sliced , शिमलामिर्च
1 Onion, Sliced, प्याज
3-4 Mushroom, Sliced , मशरूम
1 Tomato, sliced, टमाटर
Salt to taste , नमक स्वादअनुसार
1 tsp Chilli flakes, चिल्ली फ्लक्स
1 tsp Oregano , ऑरेगैनो
4-5 Basil leaves, बेसिल लीव्स
For Sauce
1 tbsp Oil, तेल
2-3 Garlic, Chopped, लहसुन
1 medium Onion, Chopped, प्याज
½ cup fresh Tomato Puree, टमाटर प्यूरी
½ tsp Sugar, चीनी
½ tsp Vinegar, सिरका
Salt to taste, नमक स्वादअनुसार
½ tsp Oregano , ऑरेगैनो
½ tsp Chilli flakes , चिल्ली फ्लक्स
⅓ cup Mozzarella cheese or Pizza cheese , grated , मोज़ेरेला
Process
For pizza dough
● In a large mixing bowl, add all purpose flour, wheat flour, baking powder, baking soda, oil, salt,
and curd mix everything well.
● Add water as required and make soft dough. Knead for about 5-6 minutes until the dough turns
very soft but not sticky.
● Cover and set this aside for about an hour.
For topping
● Heat oil in a pan, add sliced onion, capcium, mushroom, tomato, salt to taste, chilli flakes,
oregano toss the vegetable well and keep it aside in a refrigerator.
For sauce
● In the same pan heat oil, add chopped garlic, onion saute until the onions are translucent.
● Add fresh tomato puree, sugar, vinegar, salt to taste and mix well.
● Add oregano, chilli flakes mix well and remove most of the water from it and keep it aside.
For Making pizza
● Divided the dough into 2 to 3 parts. Dust the rolling board lightly and roll it slightly thicker than a
chapati. And prick it with a fork all around the dough.
● Now heat a flat pan and place the rolled dough on it and cook one side of it properly on a low
flame.
● Turn it on to the other side cooking it in low flame and start by spreading a spoon full of tomato
sauce all around the bread and grate the mozzarella cheese and spread well .
● Spread the toss veggies well and add a few basil leaves .
● Sprinkle some more cheese on top.
● Cover and cook until the cheese begins to melt on low flame.
● Remove and drizzle some olive oil all around and slice tawa pizza and serve hot.

Shakkar / Cheeni - 1 tbsp

Baking soda / Meetha Khane ka Soda- ¼ tsp or 2 chutki
Dahi - Atta Guthne ke lie

Butter / Oil - 1 tbsp (plate aur base me lagane ke lie)
Pizza Sauce - 1 tsp

Schezwan Sauce - 1 tsp
